Hackbraten

Hackbraten, or German meatloaf, is a hearty and satisfying dish made with ground meat and often mixed with vegetables and spices. It's a great comfort food and can be served in various ways. Here’s a classic recipe for Hackbraten:

Ingredients:

For the Meatloaf:

  • 500g ground beef (or a mix of beef and pork)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 2 slices stale bread, soaked in 1/4 cup milk, then crumbled (or 1 cup breadcrumbs)
  • 1/4 cup milk (if not using breadcrumbs)
  • 1 tablespoon mustard
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)

For the Glaze (Optional):

  • 2 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions:

1. Prepare the Meat Mixture:

  • Soak Bread: In a small bowl, soak the bread in 1/4 cup milk. If using breadcrumbs, just measure them out.
  • Combine Ingredients: In a large bowl, mix together the ground meat, chopped onion, minced garlic, egg, soaked bread (or breadcrumbs), mustard, paprika, dried thyme, salt, pepper, and parsley (if using). Mix until well combined.

2. Form the Meatloaf:

  • Shape: Transfer the meat mixture to a baking sheet or a loaf pan. Shape it into a loaf about 1.5 to 2 inches thick. If using a baking sheet, form it into a loaf shape and ensure it is even.

3. Add the Glaze (Optional):

  • Mix Glaze: In a small bowl, combine the ketchup, brown sugar, and Worcestershire sauce.
  • Apply Glaze: Spread the glaze evenly over the top of the meatloaf.

4. Bake the Meatloaf:

  • Preheat Oven: Preheat your oven to 180°C (350°F).
  • Bake: Bake the meatloaf for 60-70 minutes, or until it reaches an internal temperature of 70°C (160°F) and is cooked through. If using a loaf pan, check the internal temperature for doneness.

5. Serve:

  • Rest: Let the meatloaf rest for about 10 minutes before slicing. This helps it hold its shape and makes it easier to slice.
  • Slice and Serve: Serve the Hackbraten with your choice of sides, such as mashed potatoes, roasted vegetables, or a fresh salad.

Tips:

  • Variations: You can add other ingredients to the meat mixture, such as finely chopped bell peppers, grated carrots, or even cooked bacon bits for extra flavor.
  • Moisture: If the meatloaf seems dry, you can add a bit more milk or a few tablespoons of beef broth to the mixture.
  • Freezing: Hackbraten freezes well. You can make it ahead of time and freeze portions for later use.

Enjoy your homemade Hackbraten, a comforting classic that's perfect for family dinners!
