Beef ribs in honey mustard glaze

Ingredients:

For the Ribs:

  • 1.5-2 kg beef short ribs
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika (optional, for extra flavor)
  • 1 tbsp olive oil

For the Honey Mustard Glaze:

  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tbsp whole grain mustard
  • 2 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp black pepper

Instructions:

Prepare the Ribs:

  1. Preheat the oven: Preheat your oven to 160°C (325°F).

  2. Season the ribs: Rub the beef ribs with olive oil, salt, pepper, garlic powder, and smoked paprika. Make sure the ribs are evenly coated with the seasoning.

  3. Sear the ribs: Heat a large skillet or frying pan over medium-high heat. Sear the ribs for 2-3 minutes on each side until browned. This helps lock in the flavor and adds a nice crust to the ribs.

  4. Bake the ribs: Place the seared ribs in a roasting pan or on a baking tray. Cover tightly with foil and bake for 2.5 to 3 hours, or until the ribs are tender and the meat is falling off the bone.

Make the Honey Mustard Glaze:

  1. Prepare the glaze: While the ribs are baking, whisk together the Dijon mustard, honey, whole grain mustard, apple cider vinegar, minced garlic, soy sauce, Worcestershire sauce, and black pepper in a small bowl.

Glaze and Broil:

  1. Glaze the ribs: Once the ribs are tender, remove them from the oven and increase the oven temperature to 220°C (425°F). Brush the honey mustard glaze generously over the ribs.

  2. Broil or finish in the oven: Return the glazed ribs to the oven, uncovered, and broil for about 5-7 minutes, or until the glaze is sticky and caramelized. Keep an eye on them to avoid burning.

  3. Rest and serve: Let the ribs rest for 5-10 minutes before serving, allowing the juices to settle.
